Grain-Free Almond Butter Chocolate Chip Cookies
If there is one thing I can readily admit I am not good at when it comes to the kitchen it is baking. Other than making the occasional banana bread, I much prefer to experiment with raw desserts (i.e. my go-to raw cheesecake) or just eat a slice of toast to stave off my carb cravings, but I found this recipe a few months back and have made my own version of them at least a dozen times since then.
They are a one-bowl mixture (easy clean-up) and are gluten-free, grain-free, paleo, vegan, refined sugar free, AND taste incredible! It doesn’t get much better in my book.
Ingredients
1 cup almond flour
1/2 cup coconut flour
1 tsp. baking soda
1/4 tsp. sea salt
6 tbsp. coconut oil, melted
3/4 cup coconut sugar
6 tbsp. almond butter
1 1/2 tsp. vanilla extract
1 chia egg OR 1 egg for non-vegan version
(mix 1 tsp of chia seeds with 1/3 cup water and let sit for 5 minutes)
1 1/4 cups dairy free chocolate chips

Instructions
1. pre-heat oven to 350 degrees
2. if making vegan version, make chia egg and let sit while you prep other ingredients
3. mix all ingredients in a large mixing bowl + add chia egg
4. roll dough into 1″ thick round balls and place on parchment-lined baking sheet
5. bake for 15 minutes
6. enjoy!
