Coconut Butter Rice Krispie Treats
I used to be obsessed with crunch bars. No kidding, I looked forward to Halloween every year as a kid so that I could trade all of my other candy for this very underrated treat and savor each little bite-sized treat for as long as I could post-holiday. There is just something about the crunch of puffed rice that does it for me. I also have very fond memories of my mom making rice krispie treats when we were little (it wasn’t very often, but dang I can’t think of anything better than those homemade sticky sweet treats).
I’ve talked about it before, but we buy almost all of our dry goods (nuts, granolas, etc.) from Thrive Market, and recently decided to try our some new-to-us cereals to keep on hand.
We ended up with a box of this cacao crisp cereal from One Degree (a favorite brand!) and, after a major nostalgic craving for rice krispie treats one night, I decided to try out a new recipe. This recipe is by far the easiest dessert I’ve ever made and only requires one bowl (score!) so it’s super easy to clean up.
Ingredients
5 cups puffed rice cereal (I used this one)
1/2 cup coconut butter (I love this one and this one)
1 cup nut butter (I used cashew butter, but almond works great too)
1/4 cup honey
1/4 tsp. sea salt
Directions
1. melt the honey and coconut butter in a small saucepan until soft
2. in a large mixing bowl, stir all ingredients together until it forms a sticky consistency
3. line a small baking pan with parchment paper and spread the mixture in the pan.
4. store in refrigerator or freezer and use a serrated knife to cut anytime you want a bite!
