Grain-Free Blueberry Waffles
Blair and I will be celebrating our 2 year wedding anniversary this upcoming September, and I have to admit, we’ve had a gifted waffle maker sitting in our kitchen for that entire time completely unwrapped. Every month I say “we should really make waffles” and then we just don’t….for some reason waffles have always seemed really intimidating to me!
A few weeks ago, though, I had a sudden urge to create something that wasn’t a smoothie or scrambled eggs for breakfast and decided it was the perfect time to whip out the very long overdue waffle maker (this is the one we have, in case you’re curious!). Let me tell you….these took no more than 10 minutes and were wayyyy easier than I had imagined, not to mention the cleanup was virtually nonexistent and much simpler than pancakes.
With some frozen blueberries as my inspiration, I whipped up these waffles using just one bowl and whatever I could find on-hand in the pantry. I’m thinking I’ll make a big batch of these again soon and then freeze them so that they’re super easy to pop in the toaster for a quick and easy breakfast.
Ingredients
1/2 cup cassava flour
1/2 cup coconut flour
2 tbsp. coconut oil
2 eggs
3/4 cup nut milk of choice
1 tbsp. coconut sugar or honey
1 cup frozen blueberries
Instructions
1. mix all ingredients together in a large mixing bowl
2 spray coconut oil in the waffle maker
3. place 1 cup mixture in each waffle mold and cook for 3-4 minutes on high
4. enjoy!
